Straw mushroom or paddy straw mushroom (Volvariella volvaceae) is a small tropical and subtropical edible mushroom, approximately thumb sized, and distinguished by its pale pink gills and white spore print.This mushroom has long white stem with a bulbous base and drooping yellow to brown cap with a partial veil.It is cultivated throughout East and South East Asia.They resemble poisonous death cap mushroom, but can be distinguished by their pink spore print whereas spore print of death cap mushroom is white.Straw mushroom are grown on rice straw beds and picked immature, during the button or egg phase and before the veil ruptures.They are adaptable  and take four to five days to mature, and are more successfully grown in subtropical climates with high annual rainfall.

Straw mushrooms are low in calories, fat-free, cholesterol-free, and very low in sodium.With such low calories in mushroom yet rich, satisfying flavor, they make a great substitute for meat and other higher-calorie-food.Straw mushroom contains important nutrients such as vitamin B1 (Thiamine), vitamin B6, vitamin B9 (Folate), vitamin B12, vitamin C, vitamin D, selenium, potassium, copper, zinc, iron, protein, amino acids, and dietary fiber.
